Isa Guarguaglini has governed the Zì Martino kitchen for 35 years.
She is specialised in the traditional Tuscan cuisine with lots of hearty soups and grilled meati.
When they opened the restaurant, in a small country house, people used to wait outside for hours to be able to eat at "Isa's".
In 1993 the family built a larger restaurant , but by then the legend was so well known that people often reserve a place so that they don't have to wait, especially in the summer months.
Isa has her recipes written in an old family cook book on pergamen and she publishes them on www.lacucinamia.net where she teaches her Tuscan cuisine secrets. |
